Ingredients
  • 400g fish fillet (use firm white fish)
  • ¾ cup water chestnuts, chopped
  • 12 - 14 napa cabbage leaves, cut into 6” x 4”
  • Salt and pepper to taste
Garnish
  • 20g red capsicum, blanched
  • 20g yellow capsicum, blanched
  • 10g oyster mushroom, blanched
Preparation method
  1. Blanch the cabbage leaves in boiling water for 30 - 40 seconds and shock them in ice water. Drain and set aside.
  2. Use a fork to gently mince the fish into a paste and season to taste. Add in the water chestnuts.
  3. Put about 2 tablespoons of the fish paste onto the cabbage leaf and roll it into dumplings.
  4. Steam the dumplings for about 8 - 12 minutes.
  5. Garnish with the capsicums and mushrooms. Serve warm.
